Due to the rapidly growing probiotic market, increasing numbers of new probiotic strains are being used for production of functional foods. Bifidobacterium strains are the next most common used bacteries in the production of probiotics. Nevertheless, bifidobacteries remain 'difficult' organisms with regard to their isolation and identification. The aim of this project is to characterize bifidobacteries from probiotic products in selection to safety and functionality.
