A model describing the growth in bioreactor and the behaviour during drying of two yeasts able to control apple and pear diseases (Botrytis cinerea and Penicillium) will be set up and used for optimising the production and the conditioning of these two strains. Molecular probes will be determined for following the presence of the two strains on fruits.
